The brand new, part-time blended one year BA (Hons) in Professional Kitchen Management is a one year, level 8 qualification designed with chefs in mind. This course will equip the learner with techniques on how to become more efficient on what you do in your kitchen every day of the week. The course covers concepts such as sustainability, food wastage, costings, along with revenue management, talent acquisition and the management of staff.
Explore LEAN Six Sigma which looks at every element involved in food production systems and will help make your kitchen more effective and efficient as a business. You will also cover current national and EU food regulations and HACCP systems. An integral part of the programme is action learning within the candidate’s own workplace and develop their own skills based on their work context or background.
This course is delivered over one year from September to June where all theory classes take place online. There will be 12 face-to-face days in one of our ATU Donegal’s campuses, either Letterkenny or Killybegs, to look into the practical elements of the course. These on-campus days will also include demonstrations and talks from industry experts and guest speakers.
There are no end of year exams in this course. It is 100% assessment based with case studies, reports, and a practical application of what you have learned applied to an industry of your choice.
Applicants to this programme must have a level 7 award with 180 ECTs credits in a culinary or related field. Equivalent qualifications will be considered and those with experience within the industry is also invited to apply through the RPL (Relevant Prior Learning).
