Job Function – Senior Sous Chef
Job Type – Perm Full Time, 39 hpw

Salary – €38k
Senior Sous Chef
Working closely with the Executive Chef, responsible for all aspects of running our award winning kitchen. Key functions include;
-design & delivery of fine dining menus fusing world flavours with locally sourced produce
-ensure service runs smoothly – maintaining our long standing traditions of fine dining
-effective stock & cost control
-ensure hygiene standards are maintained at all times
-supervision of junior kitchen staff
Skills Requirements:
–10 years experience in 4/5 star kitchen
-Expertise in a la carte menu design & creation
-Exposure to world cuisine – European & Asian foods including Banqueting
-Experience as Team Lead
-Compliance with all food preparation & storage obligations

Salary – €30k

Working as part of a successful team, responsible for food preparation & service in this award winning kitchen. Key functions include;
-food preparation; cooking & plate decoration for daily restaurant service
-maintain quality standards in keeping with our tradition of fine dining
-provide for all our in-house bakery requirements
-ensure hygiene standards are maintained at all times
-team player – gain exposure to all sections of the kitchen
Skills Requirements
–3+ years experience in 4/5 star kitchen
-Possess all the fundamental food preparation & cooking skills; with creative plate decoration capability
-Exposure to world cuisine – European & Asian foods, flavours & presentation styles
-Banqueting experience desirable
-Team player with desire to gain experience across all sections
-Compliance with all food preparation & storage obligations
