A LETTERKENNY baker says that there is no immediate panic on supplies – and has urged people not to buy in bulk.
However, Kevin Bradley, the manager of Highland Bakery, says there is a concern about the long-term availability of ingredients.
Highland Bakery produce a popular range of baps, rolls, pastries and cakes from their base at Killyclug, just outside Letterkenny.
Some 27 staff members, including 18 on the bakery floor, work around the clock to meet demand.
The pressure has ramped up since the country’s public facilities, pubs and businesses have been shut down in recent days due to the ongoing coronavirus threat.
“It has been mental since Thursday,” Kevin, who is also the Deputy Mayor of the Letterkenny Municipal District, told Donegal Daily.
“Every staff member here is putting in a massive effort. We are on the go here about 19 hours a day.
“People out there are bulk buying and that is causing all sorts of problems for everyone. That will hopefully slow down when people a realise that shops are not going to close.”
“There is only so much a small local bakery can produce, but the staff here are working tirelessly.”
Everything produced at Highland Bakery is handmade and Kevin has assured consumers that there is no need to worry just yet.
“Ingredients might be a problem in the long-term,” he said.
“Most of the bakery’s ingredients are imported from all over the world. At present, the warehouses are all well stocked. It would be time to panic if the situation got wore and ports were closed down, but there is no immediate panic and no reason for people to worry at the moment.”
