This week we are launching our Mid-Summer Wine Pairing Menu which will run this Thursday and every Thursday until the end of June.
This special will feature a three-course meal paired with a suitable wine.
At exceptional value, priced at 35 euro per person, this Thursday night Mid-Summer menu is perfect for date night, or a group celebration.
For those that can’t join us this Thursday or want to try it at home with friends, please find a recipe for an indulgent chocolate fondant and a suggested dessert wine to serve with it.
Ingredients: Serves 6
- 115 grams 70% Dark Chocolate
- 100 grams Caster Sugar
- 100 grams butter
- 50 grams plain flour
- 2 eggs and 2 egg yolks
Recipe:
Melt butter and chocolate in a dish over boiling water (Bain Marie)
Whip eggs and sugar together to ribbon stage (when your whisk is leaving a trail in the mixture)
When the chocolate and butter mixture is at room temperature, fold into egg mix.
Sieve into flour, and fold through gently keeping air in the mixture
Pour into 6 small moulds or ramekins
Bake for 10 mins at 190C
Wine suggestion: De Bortoli Vat 5 Late Harvest Semillon, Australia
This sweet wine with notes of toffee and apricot work well with the fondants rich dark chocolate indulgence.
